It looks ok at first glance. What kernel-related problem are you having exactly?

What kernel should be set to boot the system?

title CentOS (2.6.32-279.11.1.el6.x86_64) This is the current. Correct?

title CentOS (3.6.3-1.el6xen.x86_64) This I see this second

title CentOS (2.6.32-220.el6.x86_64) And this third.

This is correct??

Which kernel should be in the boot??

What type of VPS do you plan on using? KVM? Xen? Or something else?

You may need to boot that second kernel, as I don't believe CentOS 6 includes Xen support in their default kernel.
